The determination of nitrate levels in fruit or vegetables help decide whether a given delivery batch can be released for use in a specific product like baby food. Color Reaction: Nitrate is reduced to nitrite by a reducing agent. In the presence of an acidic buffer, the nitrite reacts with an aromatic amine to form a diazonium salt, which in turn reacts with N-(1-naphthyl)-ethylenediamine to form a red-violet azo dye, the concentration of which is determined reflectometrically.
